How do you keep the chocolate from melting during shipping? We protect our chocolate from temperature extremes. During warm-weather we pack our chocolate in insulated shipping containers with frozen gel packs to prevent melting. What is Single-Estate Chocolate? Each NOKA truffle or chocolate is crafted from 75% dark chocolate couverture, made with cacao beans sourced from a distinct cacao estate. For example, our Vivienté™ truffle is made from the finest Venezuelan dark chocolate (min. 75% cacao): from the luxurious ganache (center of the truffle) to the thinly enrobed shell and delicate shavings that decorate its exterior - only pure Venezuelan dark chocolate is used. By using only single-estate chocolate it enables the tasting of the terroir or "true essence of the origin". A fitting analogy to our single-estate chocolate is to that of tasting fine wine - for example, a bottle of Californian Merlot will have a different flavor profile than a French Merlot - the resulting differences are due to a number of factors including soil and climate. The same is true with the finest single-estate chocolate. How is your chocolate different than other dark chocolate? Regular dark chocolate contains a blend of cacao from a variety of different origins or countries, whereas our chocolates are crafted with couverture made from cacao beans from a distinct cacao estate. Most regular chocolate also contains vanilla, added to round out quality imperfections and create a consistent flavor. We focus solely on the highest quality single-estate dark chocolate and as such there is no vanilla in any of our chocolate. Our passion is tasting real chocolate, in its rarest and purest form, unadulterated by vanilla and emulsifiers such as soy lecithin (an ingredient in almost all other chocolate). What is the difference between NOKA's Grand Cru Truffles and Vintages Chocolates? Our truffles are handcrafted from rare single-estate dark chocolate and fresh organic cream, creating a rich and luxurious delicacy. Our chocolates are made of pure single-estate dark chocolate, delivering an incredibly intense single-estate chocolate experience. None of our products contain any preservatives, additives or artificial ingredients. Nor do they contain vanilla or lecithin. Our focus is delighting the palate with the pure, unadulterated flavor of each estate. How do I store my truffles and chocolates? Our truffles and chocolates are the purest chocolates in the world. No preservatives, additives or artificial ingredients are used. As such, they are perishable and should be stored in a cool (60 – 68F), dry (40 – 50% Humidity) place. Do not refrigerate. How long can I keep my truffles and chocolates? Our truffles are best if enjoyed within seven-days of receipt and our chocolates are best if enjoyed within thirty-days of receipt. Please follow above storage recommendations. Do your chocolates contain gluten? Our chocolates are gluten free Do your chocolates contain soy? Our chocolates contain no soy. Do your chocolates contain any dairy products? Our truffles are made with fresh cream. Do your chocolates contain any nut products? Our chocolates contain no nuts. However, we are unable to guarantee the ingredients used in our chocolates come to us from a nut-free facility. Is my credit card and account information secure?
